Tandoori Chicken

Chocolate Chips Orea Cake

Sunday is our baking day as usual. This time we decided to try out a muffin recipe which uses that "everyone's favourite" Oreo cookies. We always prefer moist cakes over muffins which usually dry and so we made some fine tunings to the original muffin recipe for a cake recipe.

Baked Honey Hoisin Fish

There are so many types of fish available at the fresh market and I have to admit that till now I am still unfamiliar with many of them. Nevertheless, we bought this nice light pinkish colored thick and boneless fish fillet which we have no idea what type of fish it came from.

Hoisin sauce with honey were used as marinades and also for occasional basting during baking. The thick white meat inside was so soft, juicy and delicious we hardly could believe that we actually cooked it ourselves. Although it was not cheap, this fish is definitely in my shopping list for next week.

Banana Chocolate Chips Mini Cupcake

Banana and chocolate are like close buddies. I always wanted to have them both in my cake recipe. So today, I decided to incorporate these two wonderful ingredients into a plain cupcake recipe. Besides mashed banana in the batter, we also filled the center of each cupcakes with a chunky piece of banana and chocolate.

Great for tea-break or even supper (in our case), these mini cupcakes are really best when hot.
